The History of Recipes
We can trace the history of `recipes` back into history, at least as far into history as early Egypt, and potentially, even further back. However, mostly, these ancient records were just very simple hieroglyphic recipes for meal preparation.
Fascinatingly, the most ancient recipe found, according to food historians are a few tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire 25BC a roman called Apicius created a number of documents which described recipes enjoyed by his fellow Romans. In his publication, he describes how the meals were separated into hors d`oeuvres, main meal and afters, something we still use today. Additionally, he tells us how the Roman cooks made use of many herbs and spices, including some familiar names like basil, rue and asafoetida. In the 15th century, people returning from the crusades brought back many new foods, spices and herbs from the East, such as coriander, parsley, and basil. These new spices and herbs caused an eruption in manuscripts on food, most of which are kept safe in private libraries. Over the next few centuries, the families of Europe tried to serve up the most exotic banquets, and as a result cooks and their recipes were at a premium. Even so, it wasn`t until the 19th century that formal cookery and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collating, verifying, and writing down recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cookbooks were increasing in popularity due to increased literacy, people having more free time and having more money to spend. |
