The History of Recipes
We can read the history of `recipes` far back into ancient history, in fact as far back into history as the ancient Egyptians, and potentially, even further back. However, generally, these early records were just very simple pictorial, hieroglyphic or cunieform instructions for preparing food.
In fact, the most ancient recipe discovered so far, according to historians is a collection of ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Later on, in Roman times around 25BC a roman called Apicius compiled some scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were split into starters, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the cooks of his times used many aromatic flavors, including a few you will know like bay, rue and parsley. For the next few years, the rich and powerful families of the West strove to serve the most exotic banquets, and because of this the best chefs and their recipes were greatly in demand. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, verifying, and publishing the recipes that were being prepared for the better households. When we get to the twentieth century, cookbooks are starting to become popular as a result of higher levels of literacy, people having more leisure time and a general increase in wealth. The TV revolution gave us celebrity TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting us all to access massive numbers of recipes just like those on our site. |
