The History of Recipes

Food historians have tracked the existence of recipes back into distant history, at least as far back into recorded history as pharonic Egypt, and potentially, even further back. Interesting though that is, sadly, these early recipes were just simple pictorial instructions for meal preparation.

Fascinatingly, the oldest recipe discovered, according to experts are some tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful.

As we move into The time of the roman empire 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes enjoyed by wealthy Romans. In his works, he recounts how the meals were split into appetizers, main course and dessert, a style of dining still practiced today. He also recounts how the Roman cooks made use of a good variety of spices and herbs, including many that are still in use today such as bay, mint and dill.

As our culinary historical trip moves to more modern times we have a couple of interesting books which were published in the fourteenth century : a recipe book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these two books are unconnected to the indian food that is popular today, but instead descriptions of the types of meals on the menus of the rich people of that period.

In the 15th century, knights returning from the crusades brought us many foods and herbs from the holy lands, including spices like basil and rosemary. The introduction of these new culinary ideas led to a torrent in recipe manuscripts, many of which are kept safe in academic collections.

Over the next few centuries, the wealthy families of Europe competed with each other to serve up the most extravagent meals, and consequentially the best chefs and their collection of recipes became highly prized. However, it was during the nineteenth century that haute cuisine and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collecting, testing, and recording recipes for their fellow cooks to enjoy.

By the arrival of the twentieth century, recipe books were in high demand, mostly as a result of better eduction, people having increased leisure time and disposable income.

The introduction of television brought us cooking programs and the demand for the accompanying recipe books.

And that neatly brings us to the present day and the internet revolution, permitting us all to search through massive numbers of recipes such as those found on this recipe site.
