The History of Recipes
Academics have proved the existance of recipes back into ancient history, in fact as far back into recorded history as the Egypt of the Pharoahs, and possibly even further. In practice though, generally, these early cookbooks were just basic hieroglyphic recipes for food preparation.
Fascinatingly, the most ancient recipe discovered, according to academics are a few tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. During the time of the Roman Empire a man called Apicius created some documents showing how to cook the recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals were separated into hors d`oeuvres, main meal and dessert, something we still use today. Additionally, he informs us how the ancient cooks made use of a good variety of aromatic flavors, including many that are still in use today for example bay, rue and asafoetida. As our culinary historical trip moves on a few more years we have a couple of books published in the 1300s ; a cookery book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Don`t be fooled by the titles though, these books have no connection with the indian food that is familiar to us all today, but rather accounts of the types of food on the menus of the rich and powerful of those days. In the fifteenth century, knights returning from the crusades brought back many new foods and spices from the holy land, such as parsley and basil. These new culinary innovations caused an explosion in recipe manuscripts, many of which still exist in private cookery archives. By the arrival of the 20th century, cooking publications were starting to become popular as a result of better eduction, more spare time and having more disposable income. The introduction of television brings us celebrity TV chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everyone to search through massive numbers of recipes such as those found on sites such as this. |
