The History of Recipes
It is quite feasible to trace the history of recipes way back into ancient history, certainly as far back as pharonic Egypt, and possibly even further than that. However, mostly, these ancient records were just very simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the oldest recipe in existence, according to academics is a series of tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. Closer to modern times, there are two recipe books published in the 14th Century : a cookery book called `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, these books are nothing to do with the indian food that is served today, but instead descriptions of the types of food cooked for the rich and powerful of those days. Later, in the 15th century, knights returning from the crusades brought us a variety of foods and spices from Arab cooking, such as parsley, basil and rosemary. These new foods and tastes caused an outbreak in recipe publications, some of which are now in academic collections. During the succeeding few centuries, the wealthy families of Wesstern Europe competed to serve up the most extravagent banquests, and as a consequence, cooks and their collection of recipes were much in demand. However, it wasn`t until the 1800s that haute cuisine and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them. By the time we get to the twentieth century, recipe publications are highly popular as a result of more people being able to read, people having more spare time and having more disposable income. Like it or not, the introduction of TV brought us TV cooks and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes just like those on this site. |
