The History of Recipes
Written recipes as a concept can be observed back into history, at least as far back into history as the Egypt of the Pharoahs, and possibly even further. Having said that, sadly, these ancient cookbooks were just basic hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the oldest recipe found, according to experts are a few ancient tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Much later, in Roman times a man called Apicius compiled a few documents describing recipes prepared by wealthy roman citizens. In his publication, he recounts how the roman meals were divided into hors d`oeuvre, main course and desserts, something that is very familiar to us today. He also informs us how the ancient cooks made use of many different herbs and spices, including a few that are still present in modern kitchens like bay, rue and asafoetida. Later on, in the 15th century, the Crusaders brought back many foods and spices from the East, including spices such as coriander, basil and rosemary. These new spices and herbs prompted an increase in books on cookery, some of which still exist in private libraries. Over the succeeding few hundred years, the wealthy families of the West competed with each other to offer the most extravagent banquests, and as a result chefs and their recipes became highly prized. Even so, it wasn`t until the nineteenth century that fine cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and recording recipes that were common in the better off homes of the day. When we get to the twentieth century, cooking books were in great demand, as a result of increased literacy, more spare time and disposable income. |
