The History of Recipes
It is quite possible to follow the history of written cooking instructions way back into history, at least as far into history as ancient Egypt, and maybe further still. However, in the main part, these old cook books were just primitive pictorial recipes for meal preparation.
Interestingly, the oldest recipe in existence, according to experts is a collection of tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. As we move into The time of the roman empire 25BC a man called Apicius compiled a few documents describing recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals were split into appetizers, main meal and afters, something we still use today. He also tells us how the Roman chefs used a wide range of herbs and spices, including a few that will be familiar to modern chefs like bay, fennel and parsley. Over the next few centuries, the wealthy families of the West competed with each other to serve the most extravagent banquests, and as a result cooks and their recipes were greatly in demand. Nevertheless, it was during the 19th century that cooking and recipe books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to assembling, verifying, and publishing recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cooking books were in high demand, as a result of increased literacy, people having more free time and being a little richer. The introduction of television brought us cooking programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to search through thousands of recipes just like those on our web site. |
We hope you enjoy this Amaretto Creme Brulee recipe.
