The History of Recipes
It is quite feasible to prove the history of written cooking instructions way back into ancient history, at least as far into history as early Egypt, and maybe even further. Having said that, these, early recipes were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe discovered, according to academics are some tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. As we move into The time of the romans 25BC a man called Apicius compiled some scripts detailing recipes cooked by wealthy roman citizens. He tells us how the roman meals were divided into hors d`oeuvre, main course and desserts, a style of dining still practiced today. This early Roman chef describes how the Roman cooks used many herbs and spices, including some that we all recognise for example basil, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many foods and herbs from the holy lands, including spices such as rosemary and coriander. These new culinary innovations prompted a torrent in books on cooking, many of which are now in private cookery archives. During the next few hundred years, the rich families of Europe competed to offer the most extravagent meals, and consequentially chefs and their recipe collections were at a premium. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collating, verifying, and recording recipes of the day. By the time we get to the twentieth century, recipe books were in great demand, mostly as a result of better eduction, increased leisure time and having more disposable income. Like it or not, the introduction of TV brought us TV cookery programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes like the ones you can find on our site. |
