The History of Recipes
Food historians have tracked the existence of recipes back into antiquity, in truth as far back as the early Egyptians, and potentially, even further back. However, in the main part, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the most ancient recipe discovered, according to food historians are some clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. As we move into Roman times 25BC a man called Apicius created a few documents describing recipes cooked by his fellow Romans. In his works, Apicius tells us how the meals were separated into hors d`oeuvre, main meal and dessert, something we still use today. Aspicius recounts how the ancient Romans were skilled in the use of many different spices, including a few that are still present in modern kitchens such as basil, rue and dill. During the following few centuries, the rich families of Wesstern Europe competed with each other to lay on the most extravagent banquests, and consequentially the best chefs and their recipe collections could command a high salary. Nevertheless, it wasn`t until the 19th century that haute cuisine and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to collating, testing, and recording recipes for their fellow cooks to enjoy. By the advent of the 1900s, cooking publications are in high demand, as a result of better eduction, people having increased spare time and having more money to spend. |
