The History of Recipes
Written cooking instructions as a concept can be observed way back into distant history, in truth as far back as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, sadly, these early recipes were just very basic hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the most ancient recipe discovered, according to historians are a few ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. During the time of the Roman Empire a roman called Apicius compiled a collection of scripts which described recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, main course and afters, something that is very familiar to us today. This early Roman chef informs us how the Romans were skilled in the use of a wide range of spices, including some familiar names for example bay, rue and dill. Over the following few hundred years, the rich and powerful families of Europe tried to serve up the most exotic banquets, and consequentially chefs and their recipe collections were much in demand. Even so, it wasn`t until the nineteenth century that cooking and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and writing down recipes of the day. By the arrival of the 20th century, cookery publications are increasing in popularity mostly due to better eduction, leisure time and having more money. The introduction of television brings us celebrity chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting everyone to access massive numbers of recipes just like those on this web site. |
