The History of Recipes
Academics have tracked the existance of recipes back into antiquity, in fact as far into history as ancient Egypt, and maybe even further. Interesting though that is, in the main part, these old records were just very basic pictorial recipes for food preparation.
As we move into Roman times around 25BC a roman called Apicius wrote some scripts showing how to cook the recipes enjoyed by his fellow Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvre, main meal and afters, something we still use today. Additionally, he tells us how the Roman cooks made use of many herbs and spices, including some that we all recognise like bay, rue and dill. During the following few centuries, the powerful and wealthy houses strove to serve up the most exotic banquets, and as a consequence, the best chefs and their recipes were much in demand. However, it wasn`t until the 19th century that cooking and recipe books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collating, verifying, and recording recipes to allow everyone to enjoy them. Like it or not, the introduction of TV gave us TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to search through massive numbers of recipes like the ones you can find on our web site. |
