The History of Recipes
It is actually possible to trace the history of written cooking instructions back into the distant past, at least as far back into history as the Egyptians, and maybe even further. Interesting though that is, mostly, these ancient recipes were just primitive hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered so far, according to food historians are a few tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. As we move into Roman times around 25BC a man called Apicius compiled some documents showing how to cook the recipes cooked by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, a very modern way of dining. He also informs us how the Romans used many different spices and herbs, including some familiar names like bay, mint and asafoetida. Moving on, we have some books published in the 14th Century : a recipe book titled `Forme of Cury`, and another named `Curye on Inglish`. Although the titles sound familiar, these are not about the curry that we all know today, but instead descriptions of the types of meals prepared by the cooks of the upper classes. Later, in the 15th century, knights returning from the crusades brought us a variety of foods and spices from the holy land, including basil and rosemary. The introduction of these new herbs and spices prompted a torrent in manuscripts on food, most of which are now in academic collections. By the advent of the 1900s, recipe books were greatly in demand as a result of better eduction, people having more leisure time and disposable income. Like it or not, the introduction of TV brought us TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to access thousands of recipes like those on this recipe site. |
