The History of Recipes
It is possible to track the history of `recipes` back into ancient history, at least as far back into history as pharonic Egypt, and maybe even further. In practice though, in the main part, these old recipes were just basic hieroglyphic instructions for preparing meals.
The truth of the matter is, the oldest recipe in existence, according to food historians are some ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. As we move into The time of the romans around 25BC a roman called Apicius created a few documents describing recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals were divided into starters, main course and dessert, something we still use today. Aspicius describes how the early Romans made use of many different herbs and spices, including a few that are still present in modern kitchens such as bay, rue and parsley. During the next few centuries, the upper classes competed with each other to serve up the best banquets, and as a consequence, cooks and their recipe collections could command a high salary. However, it was during the nineteenth century that haute cuisine and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and recording popular recipes of the day. By the advent of the 20th century, cookbooks were in high demand, due to more people being able to read, more free time and having more money to spend. |
