The History of Recipes
We are able to read the history of written recipes way back into history, at least as far back as pharonic Egypt, and potentially, even further back. In practice though, these, early cookbooks were just very simple hieroglyphic instructions for food preparation.
As we move into The time of the romans around 25BC a roman called Apicius compiled a collection of documents detailing recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, main course and desserts, something that is very familiar to us today. He also describes how the chefs of Roman times made use of a good variety of spices, including a few you will know such as bay, fennel and dill. Later, in the fifteenth century, knights returning from the crusades brought back many foods and spices from middle-east cuisine, including spices like basil and rosemary. The introduction of these new tastes created an increase in recipe books, some of which are kept safe in private collections. By the advent of the 20th century, cookery publications are in great demand, as a result of higher levels of literacy, people having increased leisure time and having more money to spend. |
