The History of Recipes
It is quite feasible to trace the history of written cooking instructions way back into the distant past, certainly as far back into history as the early Egyptians, and quite possibly further than that. In practice though, mostly, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the oldest recipe discovered so far, according to experts in ancient history is a collection of ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. As we move into The time of the romans 25BC a man called Apicius assembled a few documents detailing recipes enjoyed by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into starters, main course and afters, something that is very familiar to us today. This early Roman chef recounts how the cooks of Roman times made use of a wide range of herbs, including a few that are still present in modern kitchens like basil, fennel and asafoetida. Later, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab cuisine, including spices like coriander, basil and rosemary. The introduction of these new tastes was responsible for an increase in manuscripts on cookery, some of which are kept safe in private cookery archives. By the time we get to the twentieth century, recipe books are highly popular due to higher levels of literacy, people having increased free time and a general increase in wealth. Like it or not, the introduction of TV brought us TV cooks and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes just like those on this web site. |
