The History of Recipes
Food historians have found proof that recipes existed way back into history, certainly as far back into history as early Egypt, and quite possibly further than that. Interesting though that is, mostly, these ancient records were just simple pictorial instructions for preparing meals.
Later on, in Roman times 25BC a roman called Apicius compiled a collection of scripts detailing recipes enjoyed by wealthy roman citizens. In his scrolls, he describes how the meals of wealthy Romans were separated into starters, main meal and desserts, something that is very familiar to us today. This early Roman chef informs us how the Roman cooks made use of a wide range of herbs and spices, including a few that are still present in modern kitchens such as thyme, mint and parsley. During the succeeding few hundred years, the rich and powerful families of Europe competed to serve the most exotic meals, and as a consequence, the best chefs and their recipes could command a high salary. However, it was during the 19th century that cookery and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to assembling, verifying, and recording popular recipes of the day. Like it or not, the introduction of television brings us TV cooks and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, permitting us all to search through massive numbers of recipes just like those on our web site. |
