The History of Recipes
It is possible to read the history of written recipes far back into antiquity, in truth as far back as the ancient Egyptians, and possibly even further. In practice though, in the main part, these old records were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Later on, in The time of the roman empire 25BC a roman called Apicius wrote some scripts which described recipes cooked by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were separated into hors d`oeuvre, main course and desserts, something that is very familiar to us today. Additionally, he recounts how the Roman chefs used many herbs, including a few you will know for example basil, fennel and dill. During the following few hundred years, the powerful and wealthy houses tried to offer the most exotic meals, and as a result cooks and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and recipe publications became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collating, verifying, and writing down recipes of the day. By the time we get to the 1900s, cook books are starting to become popular mostly due to increased literacy, more free time and having more money to spend. |
