The History of Recipes
We can trace the history of written recipes back into ancient history, at least as far back into history as the Egypt of the Pharoahs, and maybe further still. In practice though, these, ancient cook books were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In fact, the oldest recipe in existence, according to experts in ancient history are a few stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. Later on, in Roman times around 25BC a man called Apicius created a number of scripts describing recipes prepared by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were separated into appetizers, main course and desserts, something that is very familiar to us today. This early Roman chef tells us how the ancient Romans used a wide range of aromatic flavours, including some that we all recognise like bay, rue and parsley. Later on in the 1400s, knights returning from the crusades brought us many foods and spices from Arab countries, including coriander, parsley, and basil. The introduction of these new culinary ideas led to an increase in recipe books, some of which are kept safe in academic collections. For the next few years, the rich families of the West competed with each other to offer the most extravagent banquests, and as a consequence, the best cooks and their recipes increased in prestige. However, it was during the nineteenth century that cookery and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to assembling, trying out, and writing down recipes to help cooks of their time. The introduction of the TV brings us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to access thousands of recipes just like those on our site. |
