The History of Recipes
It is quite possible to prove the history of recipes far back into distant history, certainly as far into history as the Egyptians, and possibly even further. In practice though, sadly, these ancient recipes were just primitive pictorial recipes for meal preparation.
Interestingly, the oldest recipe discovered so far, according to experts are some stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. During Roman times 25BC a roman called Apicius wrote a collection of documents describing recipes cooked by the Romans. In his publication, Apicius describes how the roman meals were separated into starters, main meal and afters, something we still use today. Aspicius describes how the early Romans made use of many different aromatic flavours, including many that are still in use today like basil, fennel and parsley. Later, in the 15th century, people returning from the crusades brought back many foods, spices and herbs from middle-east cuisine, including spices such as parsley and basil. These new culinary innovations was responsible for an explosion in manuscripts on cooking, most of which still exist in private collections. During the succeeding few centuries, the powerful and wealthy competed with each other to lay on the best banquets, and because of this chefs and their recipe collections were highly sought after. Notwithstanding that, it was during the 19th century that cooking and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, trying out, and recording recipes that were common in the better off homes of the day. By the time we get to the twentieth century, cook books were in high demand, due to higher levels of literacy, more spare time and disposable income. Like it or not, the introduction of TV gave us cooking programs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like those on our site. |
