The History of Recipes
It is quite possible to follow the history of written cooking instructions back into ancient history, in truth as far as ancient Egypt, and maybe further still. Interesting though that is, sadly, these old cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe in existence, according to academics is a collection of stone tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. As we move into Roman times around 25BC a man called Apicius created some documents which described recipes prepared by wealthy roman citizens. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Aspicius informs us how the chefs of Roman times made use of many aromatic flavours, including a few you will know like bay, mint and parsley. Moving on, we have two interesting cookery books which appeared in the 14th Century : a cookery book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are somewhat misleading tho`, these are nothing to do with the indian food that is popular today, but instead recipes for the types of food prepared by the chefs of the rich people of the time. Later, in the 15th century, knights returning from the crusades brought back many new foods and herbs from Arab countries, including basil and rosemary. These new foods and tastes caused a surge in recipe manuscripts, many of which are kept safe in private collections. By the advent of the 1900s, cooking publications were increasing in popularity mostly as a result of more people being able to read, people having more leisure time and having more disposable income. |
