The History of Recipes
We are able to follow the history of meal recipes back into antiquity, in fact as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. However, generally, these old recipes were just very basic hieroglyphic or cunieform instructions for meal preparation.
Later on, in The time of the roman empire around 25BC a man called Apicius compiled a collection of documents showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, entrees and desserts, a very modern way of dining. Aspicius also informs us how the ancient Romans used many different spices and herbs, including a few that will be familiar to modern chefs for example bay, rue and parsley. During the following few hundred years, the powerful families of Europe strove to serve the most extravagent banquests, and as a consequence, chefs and their collection of recipes were greatly in demand. Nevertheless, it wasn`t until the 1800s that cookery and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to assembling, testing, and publishing the recipes of their peers. By the time we get to the 1900s, recipe publications were greatly in demand as a result of more people being able to read, leisure time and having more money. |
