The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions back into the far past, at least as far back into recorded history as the early Egyptians, and possibly even further. However, generally, these old cookbooks were just very simple pictorial instructions for preparing meals.
In an interesting twist, the oldest recipe discovered, according to academics is a collection of tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. During the time of the Romans a man called Apicius compiled some scripts detailing recipes cooked by wealthy Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvre, main course and desserts, a very modern way of dining. Additionally, he recounts how the ancient Romans were skilled in the use of many aromatic flavours, including a few you will know for example thyme, mint and parsley. Over the next few hundred years, the rich families of Europe competed to serve up the most exotic banquets, and consequentially chefs and their recipe collections were at a premium. Even so, it wasn`t until the nineteenth century that fine cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to collating, trying out, and writing down the recipes of their peers. When we get to the 20th century, recipe books were in great demand, mostly due to better eduction, increased leisure time and having more disposable income. The arrival of TV brought us TV cookery programs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to access thousands of recipes like the ones you can find on our site. |
