BATTER
1 1 stick margarine -- at room
Directions
: temperature
3 lg bananas -- mashed
1 egg white -- whipped
1 TB lemon peel -- grated
1 ts vanilla
1/2 c skim milk -- at room
: temperature
2 c unbleached flour
3/4 c granulated sugar
1/4 ts salt
1 TB baking powder
: Topping----
1/3 c brown sugar -- packed
1/3 c unbleached flour
3/4 ts cinnamon
Preheat oven at 375. Prepare a 8 1/2 springform pan with cooking
spray and flour. To prepare batter, in a mixing bowl, combine
margarine, bananas, egg white, lemon peel, vanilla, and milk. In
another mixing bowl, combine flour, sugar, salt, and baking powder.
Mix wet ingredients with dry ingredients just until moistened. Pour
batter into prepared pan. Meanwhile, to prepare topping, combine
brown sugar, flour, and cinnamon. Sprinkle topping over batter. Bake
for 45 to 50 minutes.

The History of Recipes
Food historians have proved the existance of recipes far back into distant history, in fact as far back into history as pharonic Egypt, and maybe further still. In practice though, generally, these early cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the most ancient recipe discovered so far, according to experts is a collection of stone tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. During the time of the Roman Empire a roman called Apicius wrote a few documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals were separated into hors d`oeuvre, main course and afters, a very modern way of dining. Aspicius describes how the chefs of Roman times were skilled in the use of a good variety of spices, including a few that are still present in modern kitchens such as basil, fennel and asafoetida. Over the following few hundred years, the powerful and wealthy strove to serve the most extravagent banquests, and because of this the best cooks and their recipes became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that cooking and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collecting, testing, and recording the recipes that were being prepared for the better households. By the arrival of the 20th century, cook books were greatly in demand as a result of higher levels of literacy, people having more leisure time and disposable income. Like it or not, the introduction of television gave us TV chefs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes such as those found on this recipe site. |
