The History of Recipes
Written recipes as a concept can be found back into the distant past, at least as far back into history as pharonic Egypt, and maybe even further. In practice though, these, ancient cook books were just very simple pictorial, hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the oldest recipe in existence, according to academics are some clay tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. During the time of the Romans a man called Apicius assembled some documents describing recipes prepared by wealthy roman citizens. In his works, he tells us how the roman meals were split into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the cooks of his times used many aromatic flavors, including some that we all recognise like bay, mint and asafoetida. Later on, in the 15th century, the Crusaders brought back many foods and spices from Arab countries, including spices such as coriander, parsley, and basil. The introduction of these new culinary ideas prompted an outbreak in recipe manuscripts, some of which still exist in private collections. Over the next few hundred years, the powerful families of Europe competed with each other to offer the most extravagent banquests, and as a consequence, chefs and their recipes were much in demand. However, it wasn`t until the 1800s that haute cuisine and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, trying out, and writing down recipes to allow everyone to enjoy them. When we get to the 20th century, recipe publications were in great demand, as a result of more people being able to read, increased leisure time and having more disposable income. The arrival of TV brought us TV cookery programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to search through thousands of recipes like the ones you can find on sites such as this. |
