The History of Recipes
We can trace the history of meal recipes way back into the far past, in fact as far into history as the ancient Egyptians, and maybe even further. However, generally, these ancient cookbooks were just very basic hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe found, according to food historians are a few stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. During Roman times 25BC a roman called Apicius assembled a number of documents which described recipes cooked by the Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the ancient cooks used a wide range of spices, including a few you will know such as bay, fennel and dill. During the succeeding few centuries, the upper-class families of the West tried to offer the most exotic meals, and as a result the best cooks and their recipes could command a high salary. Nevertheless, it wasn`t until the 1800s that fine cookery and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to assembling, testing, and writing down recipes for their fellow cooks to enjoy. By the arrival of the 1900s, cookery publications were starting to become popular mostly as a result of increased literacy, people having more spare time and having more money to spend. Like it or not, the introduction of television brings us celebrity TV chefs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of the internet, allowing everyone to search through thousands of recipes just like those on this web site. |
