The History of Recipes
We can trace the history of written recipes far back into history, in fact as far back into recorded history as the early Egyptians, and quite possibly further than that. In practice though, sadly, these old cook books were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe in existence, according to food historians is a collection of stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. Later on, in Roman times around 25BC a roman called Apicius wrote a number of documents showing how to cook the recipes prepared by his fellow Romans. In his publication, he tells us how the meals were divided into starters, entrees and desserts, something that is very familiar to us today. Additionally, he tells us how the Roman chefs used a good variety of aromatic flavours, including some that we all recognise such as bay, mint and parsley. Later on, we find a couple of books from the fourteenth century ; a cookery book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, they are nothing to do with the indian curry that appears on menues today, but rather accounts of the types of food enjoyed by the rich people of that time. Later on in the 1400s, people returning from the crusades brought back many new foods, spices and herbs from Arab cooking, including spices like basil and coriander. The introduction of these new tastes was responsible for a surge in recipe books, some of which are now in private cookery archives. By the advent of the twentieth century, cook books were starting to become popular due to more people being able to read, people having increased free time and having more money to spend. The introduction of the TV gave us celebrity TV chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes such as those found on our site. |
