The History of Recipes
It is possible to trace the history of written recipes way back into the distant past, in fact as far back as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that maybe, mostly, these early cookbooks were just primitive hieroglyphic instructions for preparing food.
Later on, in The time of the roman empire around 25BC a man called Apicius assembled a few documents showing how to cook the recipes cooked by his fellow Romans. In his scrolls, he tells us how the meals were split into hors d`oeuvres, entrees and dessert, something that is very familiar to us today. He also describes how the cooks of his times made use of many spices, including a few that will be familiar to modern cooks like bay, mint and dill. During the following few hundred years, the powerful families of the West strove to offer the most extravagent banquests, and consequentially cooks and their collection of recipes increased in prestige. Even so, it wasn`t until the 1800s that fine cookery and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to collating, testing, and publishing recipes that were common in the better off homes of the day. By the time we get to the 1900s, recipe books are greatly in demand as a result of better eduction, more free time and a general increase in wealth. |
