The History of Recipes
Recipes as a concept can be tracked far back into history, at least as far back as the early Egyptians, and potentially, even further back. Interesting though that is, in the main part, these old recipes were just basic pictorial instructions for meal preparation.
In an interesting twist, the oldest recipe found, according to food historians are some stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. Much later, in Roman times a roman called Apicius wrote a number of scripts detailing recipes cooked by wealthy Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and afters, something we still use today. He also informs us how the ancient cooks made use of a good variety of spices and herbs, including a few you will know like thyme, rue and asafoetida. Over the succeeding few hundred years, the powerful and rich houses competed to serve up the most exotic banquets, and as a result the best chefs and their recipe collections could command a high salary. However, it wasn`t until the 1800s that formal cookery and recipe books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collecting, testing, and publishing recipes to allow everyone to enjoy them. When we get to the twentieth century, cook books were in great demand, due to increased literacy, people having increased spare time and having more money to spend. The TV revolution gave us TV cookery programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes such as those found on this site. |
