1 1/2 cup finely chopped nuts
2 tbsp sugar
3 tbsp margarine, melted
32 oz cream cheese, softened
1 cup sugar
3 tbsp unbleached all-purpose flour
4 each large eggs
1 cup sour cream
1 tbsp instant coffee granules
1/4 tsp cinnamon
1/4 cup boiling water
Directions
Combine nuts, sugar, and margarine; press onto bottom of 9-inch
spring- form cake pan. Bake at 325 degrees F., 10 minutes. Combine
cream cheese, sugar, and flour, mixing at medium speed on electric
mixer until well blended. Add eggs, one at a time, mixing well after
each addition. Blend in sour cream. Dissolve coffee granules and
cinnamon in water. Cool; gradually add to cream cheese mixture,
mixing until well blended. Pour over crust. Bake at 450 degrees F.,
10 minutes. Reduce oven temperature to 250 degrees F.; continue
baking 1 hour. Loosen cake from rim of pan; cool before removing rim
of pan. Chill. Garnish with whipped cream and whole coffee beans if
desired.

The History of Recipes
It is actually possible to trace the history of written cooking instructions way back into the distant past, certainly as far back as the Egypt of the Pharoahs, and quite possibly further than that. Having said that, sadly, these old cookbooks were just basic hieroglyphic instructions for food preparation.
The truth of the matter is, the oldest recipe discovered so far, according to experts is a series of clay tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. As we move into Roman times around 25BC a man called Apicius assembled a number of documents describing recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals were divided into starters, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the early Romans were skilled in the use of many different aromatic flavors, including a few that are still present in modern kitchens like thyme, rue and asafoetida. Later, in the 15th century, the Crusaders brought back many foods and spices from Arab cuisine, including coriander, basil and rosemary. These new spices and herbs was responsible for a surge in manuscripts on cooking, the majority of which are kept safe in private collections. By the advent of the 1900s, recipe books are in high demand, as a result of higher levels of literacy, people having increased free time and disposable income. The revolution that is television brought us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everybody to access massive numbers of recipes like those on sites such as this. |
