1 1/2 cup finely chopped nuts
2 tbsp sugar
3 tbsp margarine, melted
32 oz cream cheese, softened
1 cup sugar
3 tbsp unbleached all-purpose flour
4 each large eggs
1 cup sour cream
1 tbsp instant coffee granules
1/4 tsp cinnamon
1/4 cup boiling water
Directions
Combine nuts, sugar, and margarine; press onto bottom of 9-inch
spring- form cake pan. Bake at 325 degrees F., 10 minutes. Combine
cream cheese, sugar, and flour, mixing at medium speed on electric
mixer until well blended. Add eggs, one at a time, mixing well after
each addition. Blend in sour cream. Dissolve coffee granules and
cinnamon in water. Cool; gradually add to cream cheese mixture,
mixing until well blended. Pour over crust. Bake at 450 degrees F.,
10 minutes. Reduce oven temperature to 250 degrees F.; continue
baking 1 hour. Loosen cake from rim of pan; cool before removing rim
of pan. Chill. Garnish with whipped cream and whole coffee beans if
desired.

The History of Recipes
It is quite possible to track the history of transcribed cooking instructions back into the far past, in fact as far back into history as the Egyptians, and possibly even further. In practice though, generally, these early recipes were just basic pictorial instructions for food preparation.

As we move on, there are some interesting books dating from the 14th Century - one book entitled `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, they are nothing to do with the indian food that appears on menues today, but rather accounts of the types of food prepared by the chefs of the rich and wealthy people of that time. During the next few centuries, the powerful families of the West strove to offer the most exotic banquets, and because of this the best cooks and their recipes were greatly in demand. However, it was during the 1800s that haute cuisine and recipe publications really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collating, verifying, and recording the recipes that were being prepared for the better households. The revolution that is television brought us TV chefs and the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes like those on our web site. |
