1 1/2 cup finely chopped nuts
2 tbsp sugar
3 tbsp margarine, melted
32 oz cream cheese, softened
1 cup sugar
3 tbsp unbleached all-purpose flour
4 each large eggs
1 cup sour cream
1 tbsp instant coffee granules
1/4 tsp cinnamon
1/4 cup boiling water
Directions
Combine nuts, sugar, and margarine; press onto bottom of 9-inch
spring- form cake pan. Bake at 325 degrees F., 10 minutes. Combine
cream cheese, sugar, and flour, mixing at medium speed on electric
mixer until well blended. Add eggs, one at a time, mixing well after
each addition. Blend in sour cream. Dissolve coffee granules and
cinnamon in water. Cool; gradually add to cream cheese mixture,
mixing until well blended. Pour over crust. Bake at 450 degrees F.,
10 minutes. Reduce oven temperature to 250 degrees F.; continue
baking 1 hour. Loosen cake from rim of pan; cool before removing rim
of pan. Chill. Garnish with whipped cream and whole coffee beans if
desired.

The History of Recipes
Recipes as an idea can be found back into ancient history, in fact as far back as pharonic Egypt, and possibly even further. Having said that, these, early cook books were just simple hieroglyphic or cunieform instructions for preparing meals.
As we move into Roman times 25BC a man called Apicius compiled a collection of scripts describing recipes enjoyed by wealthy Romans. He recounts how the meals were split into hors d`oeuvre, main meal and desserts, something we still use today. He also recounts how the ancient Romans were skilled in the use of a wide range of spices and herbs, including some that we all recognise like bay, mint and dill. During the next few centuries, the wealthy families of the West competed with each other to serve up the most extravagent meals, and as a result the best cooks and their collection of recipes increased in prestige. Even so, it wasn`t until the 19th century that cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, testing, and recording recipes to help cooks of their time. The revolution that is television brought us cooking programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes just like those on this site. |
