The History of Recipes
Food historians have found proof that recipes existed far back into the far past, in truth as far back into history as the ancient Egyptians, and maybe even further. However, in the main part, these ancient records were just very simple hieroglyphic recipes for meal preparation.
Later on, in Roman times 25BC a roman called Apicius created some documents which described recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the meals were split into starters, entrees and desserts, something we still use today. Aspicius tells us how the cooks of Roman times were skilled in the use of a good variety of aromatic flavors, including some that we all recognise such as thyme, rue and asafoetida. During the succeeding few hundred years, the powerful and rich tried to serve the most exotic banquets, and as a consequence, chefs and their recipe collections were highly sought after. Nevertheless, it was during the 1800s that fine cooking and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collecting, trying out, and writing down popular recipes of the day. Like it or not, the introduction of television gave us celebrity chefs and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes such as those found on sites such as this. |
