The History of Recipes
Academics have proved the existance of recipes way back into antiquity, in fact as far as the ancient Egyptians, and possibly even further than that. However, sadly, these ancient cook books were just very basic hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to Professor Solomon Katz, are a few ancient tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Later on, in The time of the roman empire around 25BC a roman called Apicius wrote a collection of documents which described recipes cooked by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvres, entrees and dessert, something we still use today. Aspicius describes how the ancient Romans used a good variety of herbs, including a few you will know like bay, rue and parsley. During the following few hundred years, the powerful and wealthy tried to offer the most exotic meals, and as a consequence, the best cooks and their collection of recipes were highly sought after. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collecting, verifying, and writing down recipes to help cooks of their time. By the advent of the 20th century, cookbooks are starting to become popular mostly due to more people being able to read, more leisure time and being a little richer. |
