1 1/2 cup flour (or a little less)
1 package active dry yeast
1/2 tsp sugar
1 tsp cooking oil
3/4 cup lo-fat cottage cheese,draine
1 tbsp cornmeal
1 egg
2 tbsp grated parmesan cheese
1 tsp dried basil, crushed
1 clove garlic, minced
1 med green / sweet red pepper
1 cup sliced fresh mushrooms
1 cup shredded mozzarella cheese *
Directions
* part-skim For crust, mix 3/4 cup of the flour, the yeast, sugar,
and 1/4 t salt. Add oil and 1/2 cup warm water (120-130 deg). Beat
with electric mixer on low speed 30 seconds, scraping the bowl. Beat
on high speed 3 minutes. Stir in as much of the remaining flour as
you can. Then, knead in enough remaining flour to make a moderately
stiff dough that is smooth and elastic (5 minutes total). Shape into
a ball. Place in a greased bowl; turn once. Cover; let rise in a warm
place till double (about 30 minutes). Punch down. Cover; let rest
10 minutes.
On a floured surface roll dough into a 14" circle. Place on a pizza
pan sprayed with Pam and sprinkled with the cornmeal. Build up edges
slightly. Bake crust in 425 deg F oven about 10 minutes or lightly
browned.
In a blender combine cottage cheese, egg, Parmesan cheese, basil,
garlic, and 1/8 t pepper. Cover; blend till smooth. Spread over hot
crust. Cut green pepper into rings. Place atop pizza with mushrooms.
Sprinkle with Mozzarella. Bake in 425 deg oven till hot.

The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions back into history, in truth as far as ancient Egypt, and possibly even further. Having said that, in the main part, these ancient recipes were just simple pictorial recipes for meal preparation.
Progressing into Roman times around 25BC a man called Apicius compiled a few documents which described recipes prepared by wealthy Romans. In his scrolls, he tells us how the roman meals were separated into hors d`oeuvre, main meal and afters, something that is very familiar to us today. Aspicius also informs us how the ancient Romans were skilled in the use of many aromatic flavors, including a few that are still present in modern kitchens such as bay, fennel and dill. Later on in the 1400s, the Crusaders brought back many new foods and herbs from the East, such as basil and coriander. These new foods and spices prompted an eruption in cookery books, some of which are kept safe in private collections. The introduction of the TV brought us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of the internet, permitting everyone to access thousands of recipes like the ones you can find on sites such as this. |
