The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions way back into the distant past, at least as far into history as the Egyptians, and quite possibly further than that. In practice though, in the main part, these old records were just simple pictorial instructions for preparing meals.
Interestingly, the oldest recipe discovered so far, according to experts is a collection of tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the romans around 25BC a man called Apicius assembled a few documents detailing recipes cooked by the Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into appetizers, main meal and dessert, a very modern way of dining. Aspicius also describes how the chefs of Roman times made use of a good variety of spices and herbs, including a few that are still present in modern kitchens for example bay, rue and asafoetida. Later, in the 15th century, the Crusaders brought back many foods, spices and herbs from Arab cuisine, including spices like parsley and basil. The introduction of these new tastes led to an eruption in recipe manuscripts, the majority of which still exist in private collections. During the next few hundred years, the powerful families of the West competed to offer the best banquets, and because of this the best chefs and their recipe collections became highly prized. Notwithstanding that, it was during the 19th century that haute cuisine and cookery books really came of age. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, testing, and recording recipes common in their social group. By the time we get to the twentieth century, recipe books are in great demand, due to higher levels of literacy, people having increased free time and disposable income. Like it or not, the introduction of TV brought us TV cookery programs and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to search through thousands of recipes such as those found on this site. |
