1/4 cup butter or margarine
1 cup sugar
2 eggs
1 cup sour cream or plain low fat ogurt
1/4 cup milk
2 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt, optional
1/4 tsp vanilla extract
1/4 tsp almond extract
21 oz cherry pie filling, can
1 topping:
1/2 cup all-purpose flour
1/4 cup brown sugar
1 tsp cinnamon
3 tsp butter or margarine
1/2 cup chopped nutmeats
Directions
In mixing bowl, cream together butter and sugar. Add eggs, one at a
time. Mix well. Add remaining ingredients except pie filling. Beat
well. Spread half of the batter in a greased 13 x 9" baking pan.
Spread cherry pie filling over batter. Cover with remaining batter.
For topping: combine all ingredients except butter and nuts in a
small mixing bowl. Cut in butter. Stir in nuts. Sprinkle topping over
batter. Bake @ 350 degrees about 45 minutes until cakesprings back
when lightly pressed with finger.

The History of Recipes
Written recipes as an idea can be observed back into the distant past, certainly as far as pharonic Egypt, and quite possibly further than that. In practice though, mostly, these early cook books were just basic pictorial instructions for food preparation.
Much later, in Roman times a man called Apicius assembled a number of documents detailing recipes prepared by wealthy Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, main course and desserts, something that is very familiar to us today. He also tells us how the cooks of Roman times used many different herbs and spices, including a few you will know for example bay, mint and parsley. Over the succeeding few hundred years, the powerful families of Wesstern Europe competed to lay on the most extravagent banquests, and consequentially the best cooks and their collection of recipes increased in prestige. Notwithstanding that, it wasn`t until the nineteenth century that cookery and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to assembling, verifying, and writing down the recipes of their peers. When we get to the twentieth century, recipe books are highly popular as a result of better eduction, more leisure time and a general increase in wealth. |
