The History of Recipes
Historians have tracked the existance of recipes way back into history, in truth as far back into recorded history as early Egypt, and potentially, even further back. In practice though, mostly, these ancient cook books were just primitive hieroglyphic instructions for preparing meals.
Fascinatingly, the most ancient recipe found, according to historians are some clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. During the time of the Roman Empire a roman called Apicius compiled a few documents which described recipes enjoyed by wealthy Romans. He describes how the meals were divided into starters, main course and afters, a very modern way of dining. He also informs us how the Roman cooks used a wide range of herbs, including some familiar names such as basil, fennel and dill. Over the following few hundred years, the rich and powerful families of Europe tried to serve the most extravagent meals, and as a result the best chefs and their collection of recipes were greatly in demand. Notwithstanding that, it was during the nineteenth century the formal cooking and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, verifying, and writing down recipes for their fellow cooks to enjoy. By the arrival of the 20th century, cookery publications are increasing in popularity mostly as a result of increased literacy, people having increased leisure time and having more money. The introduction of television brings us celebrity chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to access thousands of recipes just like those on the site you are now reading. |
