2 cup flour (unbleached white)
1 1/2 cup oats
3/4 cup brown sugar, packed
1 tbsp brown sugar, packed
1 cup butter, softened
8 oz cream cheese, softened
14 oz sweetened condensed milk
1/4 cup lemon juice
2 tbsp cornstarch
16 oz whole berry cranberry sauce
Directions
Preheat oven to 350. In large bowl, combine flour, oats, 3/4 c of
sugar, and butter; mix until crumbly. Reserving 1 1/2 c of the crumb
mixture, press remainder firmly on bottom of greased 9x13" pan. Bake
for 15 minutes. Meanwhile, in small bowl, beat cheese until fluffy.
Gradually beat in sweetened condensed milk until smooth; stir in
lemon juice. Spread evenly over prepared crust. In another small
bowl, combine remaining 1 T sugar and cornstarch; stir in cranberry
sauce. Spoon evenly over cheese layer. Top with reserved crumb
mixture. Bake 40 min or until golden. Cool. Chill. Store covered in
frig. Makes 24 bars.

The History of Recipes
Food historians have proved the existance of recipes way back into distant history, in truth as far back into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, generally, these early recipes were just simple hieroglyphic recipes for food preparation.
Fascinatingly, the most ancient recipe found, according to Professor Solomon Katz, are a few stone tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire 25BC a man called Apicius assembled a few documents which described recipes enjoyed by wealthy Romans. In his publication, he tells us how the roman meals were separated into appetizers, entrees and dessert, a very modern way of dining. Aspicius describes how the ancient chefs made use of many different herbs and spices, including a few you will know such as bay, fennel and parsley. As our culinary historical trip moves to more modern times there are a couple of interesting cookery books from the 1300s : one book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, these two books are nothing to do with the indian food that we all know today, but rather accounts of the types of food on the menus of the rich and powerful of those days. In the 15th century, the Crusaders brought back many new foods, spices and herbs from the East, such as parsley, basil and rosemary. The introduction of these new culinary ideas led to an outbreak in recipe publications, the majority of which still exist in private cookery archives. The introduction of television brought us celebrity chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting us all to search through massive numbers of recipes like those on our site. |
