1 recipe unbaked pie shell
1 (recipe follows)
8 oz cream cheese softened
2 tbsp granulated sugar replacement
1 tsp vanilla extract
1 egg
1 1/2 cup unsweetened pumpkin puree
1 cup evaporated skim milk
2 eggs
2 tbsp granulated suagr replacement
1 tsp cinnamon
1/4 tsp ea ground nutmeg & ginger
Directions
Combine the softened cream cheese,2 T replacement(I use granulated
fructose) vanilla and 1 egg in a bowl.
stir well.Spread into bottom of the pie shell.
Combine the pumpkin,milk and remaining ingredients in a mixing bowl
or workbowl of processor. Beat or process until well blended. Careful
pour mixture over prepared shell. Bake in a 350^ oven for 65-70
minute or until a tester comes out clean.

The History of Recipes
It is quite feasible to trace the history of written cooking instructions back into history, certainly as far into history as the ancient Egyptians, and maybe even further. Having said that, in the main part, these old records were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. As we move into The time of the romans around 25BC a roman called Apicius compiled a number of documents describing recipes cooked by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into appetizers, entrees and afters, a style of dining still practiced today. Aspicius describes how the ancient cooks were skilled in the use of many spices, including a few that are still present in modern kitchens for example thyme, fennel and asafoetida. Later, in the fifteenth century, people returning from the crusades brought us many foods, spices and herbs from middle-east cuisine, such as coriander, parsley, and basil. The introduction of these new tastes created a surge in manuscripts on cookery, many of which still exist in private libraries. During the next few centuries, the rich and powerful families of Wesstern Europe competed with each other to serve the best banquets, and because of this cooks and their recipes were highly sought after. Notwithstanding that, it was during the 1800s that cooking and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collating, testing, and recording recipes common in their social group. By the advent of the 20th century, cookery books were in high demand, due to higher levels of literacy, people having more spare time and being a little richer. The revolution that is television brings us cooking programs and the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing us all to access massive numbers of recipes like the ones you can find on this recipe site. |
