The History of Recipes
It is possible to read the history of meal recipes back into ancient history, in truth as far back as the Egyptians, and possibly even further than that. Interesting though that is, sadly, these old records were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
In fact, the most ancient recipe discovered so far, according to experts is a series of tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. Later on, in The time of the roman empire 25BC a man called Apicius created a number of scripts which described recipes cooked by the Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and desserts, a style of dining still practiced today. He also describes how the cooks of his times used a wide range of herbs and spices, including some familiar names for example thyme, rue and parsley. Later, we have two interesting recipe books from the 14th Century : a recipe book called `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are somewhat misleading tho`, these are unconnected to the indian curry that is popular today, but rather descriptions of the types of meals served to the rich people of that period. Later, in the fifteenth century, knights returning from the crusades brought us many new foods, spices and herbs from middle-east cuisine, such as parsley, basil and rosemary. These new foods and tastes prompted a torrent in recipe books, many of which still exist in academic collections. For the decades that followed, the rich families of the West tried to offer the best banquets, and because of this cooks and their collection of recipes became highly prized. However, it wasn`t until the nineteenth century that cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, verifying, and writing down recipes of the day. By the time we get to the 1900s, cooking publications were starting to become popular due to higher levels of literacy, people having more free time and disposable income. |
