The History of Recipes
Written recipes as a concept can be tracked far back into distant history, certainly as far back into recorded history as the ancient Egyptians, and maybe even further. Having said that, mostly, these old recipes were just primitive hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe discovered, according to Professor Solomon Katz, is a collection of tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote a few documents detailing recipes prepared by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and afters, a style of dining still practiced today. Additionally, he recounts how the ancient chefs were skilled in the use of a wide range of spices and herbs, including a few that are still present in modern kitchens for example bay, fennel and asafoetida. In the 15th century, people returning from the crusades brought back a variety of spices and herbs from the holy land, including spices such as coriander, parsley, and basil. The introduction of these new foods and spices caused an explosion in cookery books, many of which are now in private libraries. The introduction of television gave us TV cooks and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting us all to access thousands of recipes just like those on this site. |
