The History of Recipes
It is quite possible to track the history of written cooking instructions way back into the far past, certainly as far back into recorded history as early Egypt, and maybe further still. However, in the main part, these old cook books were just very simple hieroglyphic recipes for preparing meals.
Interestingly, the oldest recipe discovered so far, according to experts is a collection of stone tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. Moving on, we have a couple of recipe books which appeared in the 14th Century - a recipe book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, they are unconnected to the indian curry that appears on menues today, but rather descriptions of the types of meals served to the upper classes of the period. In the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from middle-east cuisine, including spices like basil and coriander. The introduction of these new culinary ideas led to an eruption in books on cookery, some of which are now in academic collections. Over the next few centuries, the rich families of Europe tried to lay on the best banquets, and because of this the best chefs and their recipe collections were much in demand. However, it was during the 19th century that cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collecting, verifying, and writing down recipes common in their social group. By the arrival of the twentieth century, cooking publications are increasing in popularity due to higher levels of literacy, people having increased free time and having more disposable income. The introduction of television brought us celebrity chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to access massive numbers of recipes such as those found on our web site. |
