The History of Recipes
Transcribed cooking instructions as an idea can be found way back into ancient history, in fact as far back as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that is, mostly, these old cook books were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe found, according to experts is a series of clay tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. During the time of the Romans a man called Apicius created a collection of scripts showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were split into appetizers, main course and afters, something we still use today. Aspicius also recounts how the Roman cooks were skilled in the use of a wide range of aromatic flavors, including many that are still in use today for example bay, mint and dill. Later on, in the 15th century, knights returning from the crusades brought us many new foods and herbs from the East, including spices such as coriander, basil and rosemary. These new herbs and spices led to a torrent in cookery books, many of which are kept safe in private cookery archives. Over the next few hundred years, the rich families of Europe strove to lay on the most exotic meals, and as a result chefs and their recipes were highly sought after. Nevertheless, it was during the nineteenth century the formal cooking and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to assembling, trying out, and recording recipes of the day. When we get to the 20th century, cooking publications are starting to become popular mostly as a result of increased literacy, more spare time and disposable income. |
