The History of Recipes
Written recipes as an idea can be traced way back into antiquity, in truth as far into history as pharonic Egypt, and quite possibly further than that. In practice though, sadly, these ancient records were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe found, according to food historians are a few tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. Later on, in The time of the romans 25BC a roman called Apicius compiled a few scripts which described recipes cooked by wealthy Romans. He tells us how the meals of wealthy Romans were divided into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the ancient cooks made use of many spices and herbs, including some familiar names like basil, rue and parsley. Over the succeeding few centuries, the rich and powerful families of Wesstern Europe tried to serve up the most extravagent meals, and as a result the best cooks and their collection of recipes were at a premium. Notwithstanding that, it was during the nineteenth century that fine cooking and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to collecting, testing, and writing down recipes to allow everyone to enjoy them. When we get to the 20th century, cookery books were starting to become popular mostly as a result of increased literacy, more leisure time and having more money to spend. |
