The History of Recipes
We can follow the history of meal recipes far back into the distant past, in truth as far back into history as the ancient Egyptians, and maybe even further. Having said that, in the main part, these early recipes were just primitive pictorial recipes for preparing meals.
As we move into The time of the romans 25BC a roman called Apicius created a collection of scripts showing how to cook the recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were split into appetizers, entrees and dessert, a style of dining still practiced today. This early Roman chef describes how the cooks of his times were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs like basil, fennel and asafoetida. During the next few hundred years, the upper classes strove to offer the most extravagent meals, and consequentially the best cooks and their recipes increased in prestige. Notwithstanding that, it was during the 1800s that fine cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them. By the time we get to the twentieth century, cookery books are greatly in demand as a result of better eduction, people having increased free time and a general increase in wealth. |
