The History of Recipes
Transcribed cooking instructions as a concept can be found way back into distant history, at least as far into history as ancient Egypt, and potentially, even further back. In practice though, these, old cook books were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
During Roman times around 25BC a man called Apicius created a few documents describing recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the roman meals were separated into hors d`oeuvres, entrees and dessert, something that is very familiar to us today. He also describes how the ancient cooks used a wide range of aromatic flavors, including a few that will be familiar to modern chefs like basil, rue and parsley. In the fifteenth century, knights returning from the crusades brought us many foods and spices from Arab countries, including spices like basil and coriander. These new spices and herbs created a surge in manuscripts on food, some of which are kept safe in private libraries. Like it or not, the introduction of television brings us cooking programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes just like those on sites such as the one you are reading now. |
