The History of Recipes
Food historians have traced the existence of recipes far back into distant history, in truth as far back into history as the ancient Egyptians, and possibly even further. Having said that, in the main part, these ancient recipes were just primitive hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe discovered, according to Professor Solomon Katz, are some ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. As our culinary historical trip moves on a few more years we find two interesting recipe books dating from the 1300s ; one book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, these are unconnected to the indian food that appears on menues today, but rather descriptions of the types of food cooked for the nobility of that time. Over the following few hundred years, the powerful and wealthy tried to serve up the most exotic banquets, and consequentially chefs and their recipe collections were highly sought after. Nevertheless, it wasn`t until the nineteenth century that haute cuisine and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, testing, and writing down popular recipes of the day. By the arrival of the 20th century, cookbooks are increasing in popularity mostly due to better eduction, increased leisure time and being a little richer. |
