The History of Recipes
It is quite feasible to prove the history of written cooking instructions back into the far past, at least as far into history as the ancient Egyptians, and quite possibly further than that. In practice though, mostly, these early recipes were just very simple hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe discovered so far, according to food historians are some ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. As we move into The time of the romans 25BC a man called Apicius created a number of documents detailing recipes cooked by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the cooks of Roman times were skilled in the use of a wide range of herbs and spices, including some that we all recognise for example bay, mint and parsley. Later, in the 15th century, knights returning from the crusades brought us many spices and herbs from Arab cuisine, including spices like basil and coriander. The introduction of these new tastes caused an increase in recipe manuscripts, the majority of which are now in private collections. During the next few hundred years, the rich families of Wesstern Europe competed to offer the most exotic banquets, and because of this the best chefs and their recipe collections could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to assembling, verifying, and writing down recipes common in their social group. Like it or not, the introduction of TV brings us TV cookery programs and the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes just like those on our site. |
