The History of Recipes
Academics have proved the existance of recipes way back into the far past, at least as far back into history as ancient Egypt, and maybe even further. In practice though, generally, these old cook books were just very basic hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe in existence, according to experts in ancient history is a series of tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. As our culinary historical trip moves on a few more years we have some recipe books which date from the 1300s ; a book called `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, these books have no connection with the curry that is popular today, but instead recipes for the types of food prepared by the chefs of the nobility of that period. In the fifteenth century, knights returning from the crusades brought back many spices and herbs from Arab countries, including spices such as basil and coriander. These new culinary innovations caused an explosion in manuscripts on food, many of which are now in private collections. Over the following few hundred years, the upper-class families of Europe competed with each other to offer the most exotic meals, and as a consequence, chefs and their recipe collections increased in prestige. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, verifying, and writing down recipes common in their social group. The introduction of television brings us TV cookery programs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes like the ones you can find on our web site. |
