2 cup sifted flour
2 tbsp sugar
1 tsp baking soda
1 tsp cardamom
3/4 tsp salt
1 combine:
1 cup thick sour cream
2/3 cup milk
3 egg yolks, beaten
2 tbsp melted butter
Directions
Set an ableskiver pan over low heat
Sift together and set aside:
Make a well in center of dry ingredients. Add liquid mixture all at
one time, stirring until well blended.
Beat until rounded peaks are formed: 3 egg whites. Gently spread
batter over egg whites and fold together.
Test ableskiver pan by dropping on it a few drops of cold water; if
drops dance around in small beads, temperature is right. Grease well
with butter (About
1/2 tsp. per well)
Pour batter into wells, filling about one half full. With a fork turn
ableskivers frequently to brown evenly. Do not pierce. Ableskivers
are done when a wooden pick inserted in center comes out clean. Serve
immediately sprinkled with Confectioners' sugar. If desired,
accompany with a tart jam. About 4 doz. balls.

Follow above recipe. Rinse, pare and dice 2 medium-sized apples.
Sprinkle about 1 tsp. of the diced apples over batter in each well.

The History of Recipes
Academics have tracked the existance of recipes way back into the far past, at least as far into history as early Egypt, and maybe even further. However, generally, these old records were just simple hieroglyphic or cunieform instructions for preparing food.
As our culinary historical trip moves on a few more years we find a couple of interesting books dating from the fourteenth century ; one book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these two books are not about the spicy food that we all know today, but rather recipes for the types of food on the menus of the rich and wealthy people of the period. In the fifteenth century, people returning from the crusades brought us many spices and herbs from Arab countries, including spices like basil and coriander. The introduction of these new culinary ideas created an increase in books on cooking, the majority of which still exist in private libraries. The introduction of television gave us cooking programs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to search through thousands of recipes like those on this web site. |
