2 cup sifted flour
2 tbsp sugar
1 tsp baking soda
1 tsp cardamom
3/4 tsp salt
1 combine:
1 cup thick sour cream
2/3 cup milk
3 egg yolks, beaten
2 tbsp melted butter
Directions
Set an ableskiver pan over low heat
Sift together and set aside:
Make a well in center of dry ingredients. Add liquid mixture all at
one time, stirring until well blended.
Beat until rounded peaks are formed: 3 egg whites. Gently spread
batter over egg whites and fold together.
Test ableskiver pan by dropping on it a few drops of cold water; if
drops dance around in small beads, temperature is right. Grease well
with butter (About
1/2 tsp. per well)
Pour batter into wells, filling about one half full. With a fork turn
ableskivers frequently to brown evenly. Do not pierce. Ableskivers
are done when a wooden pick inserted in center comes out clean. Serve
immediately sprinkled with Confectioners' sugar. If desired,
accompany with a tart jam. About 4 doz. balls.

Follow above recipe. Rinse, pare and dice 2 medium-sized apples.
Sprinkle about 1 tsp. of the diced apples over batter in each well.

The History of Recipes
Written recipes as an idea can be found back into history, at least as far back into recorded history as the early Egyptians, and possibly even further than that. In practice though, mostly, these ancient recipes were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the oldest recipe discovered so far, according to experts in ancient history are a few clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. During the time of the Romans a man called Apicius compiled a few scripts describing recipes enjoyed by wealthy Romans. He describes how the meals were divided into hors d`oeuvres, main course and afters, a style of dining still practiced today. This early Roman chef describes how the Roman cooks made use of many different herbs, including a few you will know for example thyme, fennel and parsley. Over the next few hundred years, the wealthy families of Wesstern Europe competed with each other to serve up the best banquets, and because of this cooks and their recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that cooking and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collating, verifying, and writing down recipes common in their social group. When we get to the 20th century, recipe publications are in high demand, due to higher levels of literacy, people having more free time and a general increase in wealth. The arrival of TV brought us cooking programs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everyone to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
