1/2 tbsp yeast
1 1/2 cup oats
3 cup flour, bread
1/2 tbsp salt
1/2 tbsp dough enhancer, optional
3 tbsp oil
1 eggs
1/2 cup syrup, maple flavored
1 5/8 cup water, warm
Directions
Bring all ingredients to room temperature and pour into bakery, in
order. Set "baking control" at 11 o'clock. Select "sweet bread" and
push Start.
In hot, humid or very cold weather, reduce water to
1-1/3 c.
Tested in DAK 1-1/2 lb R2D2 bread machine. Sylvia's comment: a heavy,
dense, easy to slice bread. A little "wet," otherwise great!

The History of Recipes
It is quite feasible to prove the history of recipes back into the distant past, certainly as far as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, generally, these old cook books were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful and exhilarated. During Roman times 25BC a man called Apicius assembled a number of scripts detailing recipes prepared by the Romans. In his works, he recounts how the meals were split into hors d`oeuvre, main course and desserts, something we still use today. Additionally, he tells us how the Roman cooks used many different aromatic flavors, including a few that are still present in modern kitchens such as bay, rue and parsley. Later, in the 15th century, the Crusaders brought back a variety of foods and spices from middle-east cuisine, such as basil and rosemary. The introduction of these new culinary ideas prompted a torrent in cookery books, many of which are kept safe in private libraries. During the succeeding few centuries, the powerful families of Wesstern Europe competed to lay on the most extravagent banquests, and because of this cooks and their collection of recipes were greatly in demand. However, it wasn`t until the nineteenth century the formal cooking and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collating, trying out, and recording the recipes that were being prepared for the better households. By the time we get to the twentieth century, recipe publications were highly popular as a result of higher levels of literacy, people having more spare time and being a little richer. |
