The History of Recipes
It is quite possible to track the history of transcribed cooking instructions back into antiquity, in truth as far as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that maybe, sadly, these old records were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe in existence, according to academics is a series of tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. During Roman times around 25BC a man called Apicius assembled some documents showing how to cook the recipes enjoyed by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Additionally, he recounts how the Roman cooks used a good variety of spices, including many that are still in use today such as bay, fennel and parsley. During the succeeding few hundred years, the powerful families of Europe strove to serve up the most exotic banquets, and as a result the best chefs and their recipe collections could command a high salary. However, it wasn`t until the 19th century that cooking and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collecting, testing, and recording popular recipes of the day. Like it or not, the introduction of television brought us TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to search through thousands of recipes such as those found on this recipe site. |
