The History of Recipes
We can follow the history of `recipes` way back into distant history, at least as far back as the ancient Egyptians, and maybe even further. In practice though, sadly, these early records were just basic hieroglyphic recipes for food preparation.
In fact, the oldest recipe discovered so far, according to historians is a collection of clay tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire 25BC a roman called Apicius compiled a collection of documents detailing recipes cooked by wealthy Romans. In his scrolls, Apicius recounts how the meals were separated into appetizers, main meal and afters, a very modern way of dining. He also describes how the cooks of his times were skilled in the use of a wide range of herbs and spices, including many that are still in use today such as thyme, mint and dill. For the centuries that followed, the upper-class families of the West competed to serve up the most exotic meals, and because of this chefs and their recipe collections were greatly in demand. However, it wasn`t until the 19th century that cooking and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collating, verifying, and recording the recipes that were being prepared for the better households. When we get to the 20th century, cookery publications were in high demand, as a result of better eduction, increased leisure time and having more money to spend. The arrival of TV brings us cooking programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to access thousands of recipes like those on the site you are now reading. |
