The History of Recipes
It is possible to trace the history of meal recipes way back into history, at least as far as the early Egyptians, and potentially, even further back. In practice though, mostly, these ancient records were just basic hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe discovered, according to food historians is a series of tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Progressing into The time of the romans around 25BC a man called Apicius created some documents which described recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals were divided into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. This early Roman chef informs us how the early Romans were skilled in the use of many different aromatic flavours, including a few you will know such as thyme, rue and parsley. Moving on, we have two interesting recipe books dating from the 1300s - a cookery book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, these books are nothing to do with the curry that is popular today, but instead accounts of the types of food prepared by the cooks of the rich and powerful. Later, in the 15th century, knights returning from the crusades brought back many new foods, spices and herbs from the holy lands, including spices such as coriander, parsley, and rosemary. The introduction of these new tastes caused a surge in publications on food, many of which are now in private libraries. By the time we get to the twentieth century, cooking publications were starting to become popular due to better eduction, increased leisure time and having more money to spend. Like it or not, the introduction of TV brings us celebrity TV chefs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, permitting everybody to access massive numbers of recipes like those on sites such as the one you are reading now. |
