The History of Recipes
We can read the history of `recipes` way back into ancient history, in fact as far back as the Egyptians, and possibly even further than that. Interesting though that maybe, generally, these ancient cook books were just very basic hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe discovered so far, according to experts is a series of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `exhilarated, wonderful and blissful`. Later on, in The time of the roman empire 25BC a man called Apicius created some scripts detailing recipes enjoyed by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the early Romans were skilled in the use of many different spices and herbs, including some familiar names such as bay, fennel and asafoetida. For the decades that followed, the upper-class families of Europe competed to serve up the most extravagent meals, and because of this cooks and their recipe collections became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and cookery books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to assembling, testing, and writing down recipes for their fellow cooks to enjoy. By the time we get to the 1900s, cooking books are highly popular mostly as a result of higher levels of literacy, people having more free time and disposable income. The arrival of television brings us TV cooks and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everybody to access massive numbers of recipes like those on this site. |
