The History of Recipes
We can read the history of meal recipes far back into ancient history, certainly as far back into history as the Egyptians, and possibly even further. Having said that, generally, these old records were just simple pictorial recipes for preparing food.
In fact, the oldest recipe discovered, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Later on, there were two recipe books from the 1300s - a recipe book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, these two books are nothing to do with the spicy food that appears on menues today, but rather descriptions of the types of meals served to the upper classes of that time. For the next few years, the rich and powerful families of the West competed to serve up the best banquets, and consequentially chefs and their recipes were highly sought after. Nevertheless, it was during the 1800s that cooking and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to assembling, testing, and writing down the recipes of their peers. By the advent of the twentieth century, cookery books are highly popular due to better eduction, more spare time and being a little richer. |
