The History of Recipes
We can track the history of meal recipes back into antiquity, in truth as far back as the Egypt of the Pharoahs, and possibly even further than that. In practice though, sadly, these early cookbooks were just very basic hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe found, according to experts is a series of tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Progressing into The time of the roman empire 25BC a man called Apicius compiled a collection of documents which described recipes cooked by the Romans. He tells us how the meals of wealthy Romans were divided into hors d`oeuvre, main meal and desserts, a very modern way of dining. Additionally, he tells us how the Roman chefs made use of many herbs, including some that we all recognise such as bay, mint and dill. For the centuries that followed, the powerful families of Europe tried to offer the most extravagent banquests, and as a result cooks and their collection of recipes became highly prized. Notwithstanding that, it wasn`t until the 19th century the formal cooking and recipe books became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and writing down popular recipes of the day. By the time we get to the 20th century, cooking books were starting to become popular as a result of increased literacy, people having more free time and disposable income. |
