The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into the far past, at least as far back as pharonic Egypt, and maybe even further. Interesting though that is, sadly, these ancient records were just very simple pictorial instructions for meal preparation.
Interestingly, the oldest recipe found, according to Professor Solomon Katz, is a series of ancient tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. Closer to modern times, we find two recipe books which were published in the 1300s - a recipe book called `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are nothing to do with the curry that we all know today, but instead descriptions of the types of food prepared by the cooks of the wealthy. During the succeeding few centuries, the powerful and rich competed to serve up the most extravagent banquests, and as a result chefs and their recipes were highly sought after. However, it was during the 1800s that fine cookery and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, testing, and writing down recipes that were common in the better off homes of the day. By the time we get to the twentieth century, cookbooks are in great demand, as a result of increased literacy, leisure time and being a little richer. Like it or not, the introduction of TV gave us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes just like those on this site. |
