The History of Recipes
We are able to read the history of `recipes` back into antiquity, in truth as far as the Egyptians, and quite possibly further than that. Interesting though that is, these, ancient records were just very simple pictorial instructions for preparing food.
The truth of the matter is, the most ancient recipe discovered, according to experts in ancient history is a collection of tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. As we move into The time of the romans around 25BC a man called Apicius compiled a collection of scripts which described recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvre, entrees and afters, something we still use today. Aspicius informs us how the cooks of his times were skilled in the use of a wide range of aromatic flavors, including many that are still in use today for example bay, rue and parsley. During the next few centuries, the wealthy families of the West tried to lay on the best banquets, and consequentially the best chefs and their recipes increased in prestige. However, it wasn`t until the 1800s that cooking and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, trying out, and recording recipes common in their social group. By the advent of the 20th century, cooking books were increasing in popularity due to better eduction, people having increased free time and a general increase in wealth. The revolution that is television brought us celebrity chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everyone to access thousands of recipes just like those on sites such as this. |
