The History of Recipes
It is quite feasible to trace the history of written cooking instructions way back into ancient history, in fact as far as pharonic Egypt, and possibly even further. Interesting though that is, in the main part, these old cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe found, according to food historians is a series of tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. As we move into The time of the romans 25BC a man called Apicius compiled some scripts showing how to cook the recipes prepared by wealthy Romans. In his works, he describes how the meals were separated into starters, main course and afters, something that is very familiar to us today. He also informs us how the chefs of Roman times were skilled in the use of many herbs and spices, including a few that will be familiar to modern chefs such as bay, fennel and asafoetida. Closer to modern times, we have two books which were published in the 1300s : a book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are somewhat misleading tho`, they are unconnected to the spicy food that appears on menues today, but instead accounts of the types of food on the tables of the rich and powerful of that time. Later, in the 15th century, knights returning from the crusades brought us many new foods and spices from the Middle-East, including spices such as parsley, basil and rosemary. These new foods and tastes was responsible for a torrent in manuscripts on cookery, some of which are now in private libraries. By the time we get to the twentieth century, recipe books were starting to become popular as a result of increased literacy, more spare time and having more money to spend. Like it or not, the introduction of TV brought us celebrity TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes like the ones you can find on our site. |
